Zingy Homemade Mayonnaise

A homemade mayonnaise recipe using pure olive oil. Yummy!

Ingredients

1 1/2 cups - extra virgin olive oil (it doesn't really matter)

1 1/2 Tbsp - lemmon juice

1 1/2 Tbsp - apple cider vinegar (it's what I had)

2 egg yolks from organic eggs

1 Tbsp - dijon mustard

1 Tbsp - ground horse radish

1/8 - 1/4 Tsp salt (how salty do you want it)

dash Cayanne Pepper

dash White Pepper

 

Equipment

1 stick blender complete with the blender jar/beaker

 

Directions

  1. Seperate the egg folks and place in the bottom of the blender jar.
  2. Place the spices, lemmon juice, horse radish, mustard and vinegar in the blender jar.
  3. Slowy add the oil making sure not to stir the other ingredients. You want those on the bottom.
  4. Plug in the stick blender then immerse the head in the jar all the way to the bottom where the egg yolks are.
  5. Pulse the blender and slowy raise the blender head up to the top edge. You can see the mayonnaise forming. Raise it no faste than it can convert the mixture to mayonnaise.
When you done you have beautiful zingy mayonnaise that can be kept for several says in your refrigerator. Did you notice that it is not cooked? Is it safe? I don't know. I've been making it for over a year this way and it hasn't made me or anybody in my family sick. I got the basic recipe from a video on YouTube.com. It was a complete video explaining and demonstrating how to make mayonnaise. I will not swear that this is safe but I've used the recipe countless times to make mayonnaise for use on sandwiches, salads, dressings, etc. The purpose of using the organic eggs from range fed chickens is that they are supposed to have a much lower bacteria count! Possily more than a hundred times less. See the movie, "Food, Inc." that showed during the summer of 2009.

 

History

I had wanted to make olive oil mayonnaise for quire a while. It stemmed from the fact that olive oil is supposed to be healthier than other types of oil. Well maybe except for canola oil, but that's a whole 'nother story. I hadn't seen any olive oil mayo in the stores and had made a couple of attempts using a regular blender and following instructions. But it never turned out right! Anyway, I decided to take one more stab at it and found the YouTube video. I had to try that, so out to buy a stick blender I did go. It worked just like the one in the video! Perfect mayonnaise! Did I say that I like to experiment? I didn't follow his recipe but used it as guide line. You don't find in sugar in my mayo. You do find some other things though. I like to use mayonnaise for salad dressing. This stuff has a lot more flavor than straight olive oil, which it mostly is. You can make mayonnaise exactly how YOU want!
