Smoked A Beef Brisket
The trials and tribulations of smoking a beef brisket.
This Sunday past, I cooked a beef brisket. It is a laborious process that is quite time consuming, but the results are worth it (If you don't screw things up). I started the process late Saturday evening when I prepared the brine to soak the brisket in. Sunday morning it continued with the various aspects of butterflying the brisket, stuffing it with sausage and diced vegetables and smoking it over mesquite chips for four hours. I finished it late Sunday night simmering it in barbeque sauce for over three hours. You can checkout the recipe if you like.
